Today's confection: French Coconut Pie...the recipe from Cocinando con Alena linked here.
I chose it primarily because I had all the ingredients. It was quick and easy to put together. The filling's top baked into a delicate crunch. It was a little too sweet for me, but so good that I will definitely make again and try tweaking the amount of sugar called for.
It is similar to a buttermilk pie (my favorite pie), but with no buttermilk...or milk for that matter...but the addition of the coconut makes it chewier.
That looks yummy! We all love buttermilk pie, which I make from a fantastic Amish recipe, so this will be a good one to try as well. Thanks for sharing.

ReplyDeleteOh, mine TOO, LB. I really love the Buttermilk Pie recipe that was in the Luby's cookbook, because it wasn't too sweet. I think I have it up over at What's Cookin' 4 Miles North of Nowhere if I'm not mistaken.
